     Parishioners and friends from the 3rd grade to senior citizens help with the preparations and serving of our
dinner.  Though we serve dinner only one day per year "always the first Saturday in November",  preparations
begin  months in advance.  We make the kraut ourselves, right here on our parish property.  We also make and
smoke our famous sausage right here as well.  Our high public profile has brought scrutiny from government
agencies.  Over the last several years we have gone from smoking our sausage in a wooden building with small,
smokey fires, to a modern electronically monitored stainless steel facility.  There has been a bit of a learning
curve, but the Health Department is now satisfied that we can assure a safe and healthy product, and we are
satisfied that we can make a product that tastes as good as it has for generations!
